Chai is essentially spiced tea and can be found in countless variations in many different countries, especially in Asia. Mill & Mortar’s chai is based on classic Sri Lankan spices that include Ceylon cinnamon, cloves, ginger, cardamom and mixed black tea, also from Sri Lanka.
Recipe for Sri Lanka Chai (1 cup) –
1 teaspoon Sri Lanka Chai with 25 ml boiling water.
Add hot milk. Sweeten with Sugar, honey or syrup.
For Instant tea: Put tea and spices in a sieve or filter, and pour boiling water. Let it steep for a couple of minutes. Add some warm milk and sugar if needed.
The traditional way: Bring water and spices to a boil and cover the pot to simmer for 10 minutes. Add the milk and sugar while the Chai slowly heats up again, without actually boiling it.
Can be served hot in a cup with a stick of cardamom to garnish or ice cold in a high glass with ice cubes, whipped cream or ice cream.
