Only about 10% of the pepper harvest in Sre Ambel receives the premium First Quality tag. This pepper has eucalyptus tones, and the flavour fits poultry and meat in all Asian and classic French cuisine.
Pepper farmers in Sre Ambel are not ecologically certified, as their production is currently too small to pay off. The peppercorns are harvested and sun-dried on the plantation and then hand-sorted to achieve the exclusive uniform quality.
