Bake your own peppernut biscuits (also known as Pfeffernüsse cookies) and let the scent of Christmas waft in the house. The spice mix is made from Sri Lankan organic forest garden spices. There is an easy and delicious recipe in the package.
Cookie Spice Peppernuts can be used in any recipe for peppernut biscuits or pepper cakes- just replace the individual spices with a corresponding amount of Cookie Spice. Nordic peppernuts are small and delicious with intertwining flavours of spice, pepper and sweet. They are a must in Danish Christmas baking. Consider doubling or tripling the recipe to make sure you have enough!
Danish Peppernut biscuits:
125g of softened butter, 125g of powdered sugar, 50ml whipping cream, 2 tsp. Cookie Spice Peppernuts, 1/2 teaspoon of baking powder, 1/2 teaspoon baking soda, 250g flour. Fold in the sugar into the butter and stir in the whipping cream. Add the spice mixture, baking soda and baking powder to the flour, and sieve into the sugar butter mixture. Mix well and place in a cool spot for 1/2 hour. Form little lightly pressed balls and placed on the baking sheet.
Bake with convention fan on at 225 degrees for 7-8 minutes, depending on your oven.
