Estragon, also known as French tarragon (Artemisia dracunculus) is a culinary herb that adds a spicy-sweet and mild anise flavour to salads, chicken and fish dishes. It is probably best known for its role in Bearnaise sauce, but can also be used to enrich sauces, dressings and mustard and dishes with green vegetables. Should be added at the end of cooking to make the best use of the fine aroma.
